Easy, Healthy Bunny Carrot Cake Recipe
This yummy recipe can be used as an Easter treat! You could ice it with a cream cheese frosting too! It can also be made as muffins or a whole cake. Here, we have used the Bunny Snackie to make a mini Easter Bunny cake.
INGREDIENTS
- 2 cups whole meal flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup coconut sugar
- 1 cup coconut oil
- 3 eggs
- 2 cups grated carrot
- 1 apple, peeled & grated
- 1/2 cup sultanas
METHOD
- Preheat oven to 180C
- Mix flour, baking soda, cinnamon & salt in a bowl
- In a separate bowl mix sugar, oil & eggs
- Add wet to dry and mix until combined
- Fold in carrot, apple & sultanas
- Divide mixture into bunny snackie (plus it will also make about 8 muffins)
- Bake 18mins for muffins, 28mins for Snackie (or until a toothpick comes out clean)
Yum! With all the chocolate around at Easter, and for weeks after, it's nice to have something a little healthier on hand that stills feels just as fun for Easter.
